If you want to try something new, strong and with a surprising flavour, Nocino Will become your favourite liquor. Made from green nuts, we recommend that you take it as a digestive drink, since its alcohol level is very high. From Ice Tech we have changed the recipe a bit and added some ice. Try it!

This drink is manufactured in a traditional way in the region of Emilia-Romagna, in northern Italy. It is very popular in the country’s cuisine and Italian families take it very often. The Nocino is obtained from the maceration in alcohol of green nuts and spices. It is usually produced in summer, with the picking of the walnut in the month of June, and is consumed in winter from the beginning of Christmas. Now is a good time!

How to make the Nocino?

Ingredients

  • 600 grams of Nuts
  • 1 Lemon
  • 3 Cinnamon sticks
  • 4 Scent Nails
  • 3 litres of alcohol suitable for human consumption
  • 850 cubic centimetres of red wine
  • 1.3 kilos of sugar
  • SS Ice Tech ice

Nocino Preparation

According to the original recipe, walnuts are still green on the outside and white on the inside must be harvested. If it is not possible, buy the freshest ones you can find. Wash them well and crush them with a hammer.

Put them in a container with a zipper and add the grated skin of 1/2 lemon, cinnamon, 2 scent nails and alcohol.

You have to follow the following process for 40 days: put the container somewhere where the sun hits it. Stir it from time to time and when the sun goes down put it indoor. When the 40 days have passed, strain it, reserve both the liquid and the solid part and then put it back in alcohol.

After the first 40 days, prepare a syrup with wine, sugar and cloves that you have not used yet and boil everything for 5 minutes over low heat.

When the syrup has cooled down, add it to the maceration of walnuts and leave it closed for another 10 days.

When that time has passed, filter it through a gauze and pour it into glass bottles.

You have to keep it in a cool, dark place for a month.

When you can finally consume it, it will be worth it and it will last more than a year 🙂
